This is the basic recipe. Add whatever additions you like to make your own creations in the kitchen.
For savory muffins, decrease the sugar by at least half. Enjoy!
2 1/4 cups all purpose flour
3/4 cup sugar
1 tablespoon baking powder
1 1/2 teaspoons salt
2 eggs
1/3 cup vegetable oil
1/2 cup + 2 TBSP milk
- Mix dry ingredients together in a large bowl. Add additional ingredients for the type of muffin you are making. (1 cup blueberries, mini choc chips, etc.)
- In a separate bowl, mix the eggs, oil, and milk.
- Slowly add to flour mixture and stir until just combined, making sure all flour is incorporated. Do not over mix.
- Spray or grease muffin pans, or use cupcake liners.
- Spoon about 2 tbsp of batter into pans and bake at 375°F for 15-20 min or until golden and firm when lightly touched.
