This is the basic recipe. Add whatever additions you like to make your own creations in the kitchen.
For savory muffins, decrease the sugar by at least half. Enjoy!

2 1/4 cups all purpose flour
3/4 cup sugar
1 tablespoon baking powder 
1 1/2 teaspoons salt
2 eggs
1/3 cup vegetable oil
1/2 cup + 2 TBSP milk

  1. Mix dry ingredients together in a large bowl. Add additional ingredients for the type of muffin you are making. (1 cup blueberries, mini choc chips, etc.)
  2. In a separate bowl, mix the eggs, oil, and milk. 
  3. Slowly add to flour mixture and stir until just combined, making sure all flour is incorporated.  Do not over mix.
  4. Spray or grease muffin pans, or use cupcake liners.
  5. Spoon about 2 tbsp of batter into pans and bake at 375°F for 15-20 min or until golden and firm when lightly touched.
